Black Bean Burgers Recipe

  • Over medium heat, sauté the onion, bell pepper, garlic and jalapeño in the olive oil with the pinch of salt. Cook until translucent, stirring occasionally, about 5 – 10 minutes 
  • Place one can of the black beans in a food processor. Add the cilantro and cooked onion mixture. Pulse until smooth. Set aside 
  • In a large bowl, add the remaining black beans, corn, egg, salt, pepper, cumin and breadcrumbs. Add the smooth bean mixture to the bowl and mix everything to combine thoroughly. Divide mixture into 6 patties 
  • Using a grill pan or large skillet over medium heat, add a small amount of olive oil to the pan to coat. Cook burgers 5 min. on each side. Serve on buns with toppings of your choice
