Mini Toad in a Hole

The classic English dish with a little bit of makeover to suit your snack hour, bonfire gathering or a side dish to your lunch and dinner.

Mini Toad in a Hole

Ingredients

Standard muffin pan
6 Wellsley Farms Swiss cheese slices, cut in half
12 Wellsley Farms large eggs
Dash of salt
Dash of black pepper
 

Directions

  1. Preheat oven to 375°. Trim crusts from bread. With a rolling pin, roll out bread slices until they are as thin as pie crust (about 1/8"). Brush lightly on both sides with the melted butter
  2. Line individual cups of a muffin pan with prepared bread, pressing into the bottom and allowing edges to overhang slightly. Bake for 5 min. to crisp bread
  3. Remove pan from the oven. Arrange a half slice of cheese in the bottom of each bread cup, then break an egg into each one. Season lightly with salt and pepper, then top with diced ham
  4. Return pan to oven. Bake until egg whites are set and the yolks are set but slightly runny, about 18 min
