Bring broth (or water) to a rolling boil in a 2-qt. saucepan. While water heats, cut tofu into 1-1/2" cubes
Add salt to boiling water and remove the pan from heat. Add tofu and let sit, covered, for 15 min. Meanwhile, pulse corn flakes and seasoned salt in a blender or food processor until they’re fine crumbs. Transfer to a large resealable bag
Drain tofu in a colander, then blot with paper towels. Give tofu pieces a light spray of cooking oil, then add to the bag of crumbs, seal and shake to coat
Arrange tofu in the basket of an air fryer, being careful not to crowd the pieces. Set air fryer to 350°
