Beer Brats

Preheat grill or grill pan to medium-high heat

Prick 3 small holes in each bratwurst with toothpick or tip of a sharp knife (this will keep them from bursting on the hot grill)

Coat sausage with olive oil and brown on the grill over medium-high heat to get grill marks (they will look good but not cooked through)

Meanwhile: In a large saucepan with olive or canola oil, sauté sweet onion, peppers and garlic cloves 2 to 3 min., until they just start to soften

Add beers to cover veggies and whatever amount of brats you have. You can also add water to adjust. You can use a lager or stout, but any light beer will do too. Bring this to a simmer but not rolling boil over medium-high heat

When brats have nice grill marks, transfer to simmering beer and bring back to simmer for about 10 to 12 more minutes and turn heat to low to hold, adding more beer or water as needed to keep covered with liquid

Serve on brat-sized buns with fun mustard, simmered veggies and little gherkin pickles
