Easy Apple Cake

Preheat oven to 350°. Coat an 8" x 8" cake pan with cooking spray; set aside

In a large bowl, beat butter and sugar with an electric mixer until creamy. Beat in eggs, one at a time, until mixture is smooth

In a separate bowl, mix together the flour, baking powder, baking soda, salt and pumpkin pie spice. Add to wet ingredients and stir by hand until just blended. (Don’t overmix.)

With a rubber spatula, fold in the apples, pecans and raisins

Pour cake batter into the prepared pan, using the rubber spatula to scrape the bowl and spread the mixture evenly in the pan

Bake until a toothpick inserted into the center of the cake comes out clean, about 45 min

Transfer to a cooling rack and let rest 20 min., then cut into 8 pieces
