Steam cauliflower rice for 5 min. in bag

Whisk eggs together in small bowl

Preheat large skillet or wok over medium-high heat

Add in 1 tsp. oil

Add the eggs to the skillet and scramble until firm and cooked through. Remove eggs from skillet

Add the remaining oil

Add the cauliflower rice, carrots, peas and half the scallions to the pan, along with the soy sauce

Cook approximately 5 to 6 min., stirring frequently, until the cauliflower is slightly crispy on the outside
9
Remove from heat and mix in egg and remaining scallions
