Herbed Boneless Beef Rib Eye Roast

Roasted in garlic and herbs, this rib eye roast is a savory dinner which you can relish while relaxing on a weekend or cook for a holiday gathering and wow your guests.

30 min. before cooking, remove roast from refrigerator and preheat oven to 425°

In bowl, combine 2 tsp. oil, garlic, basil and rosemary; press into the roast, covering surface evenly

Heat rest of oil in large skillet on medium-high. Brown roast thoroughly on all sides

Transfer roast to shallow roasting pan and insert an ovenproof meat thermometer at thickest point. NOTE: Ensure tip is inserted into meat, not fat. Place uncovered pan in oven

Cook until 135° in the center for medium-rare (35 to 40 min.), 150° in the center for medium (45 to 50 min.)

Transfer roast to carving board, tent with foil and rest 15 min. to finish cooking

Carve into 1/2" thick slices and serve
