Honey Dijon Pork Chops with Green Beans

Preheat the oven to 400°. Line a large sheet pan with foil

With a fork, whisk together honey and Dijon mustard in a small bowl; set aside

Arrange apples, onion, potatoes and green beans on a sheet pan in a single layer, leaving space for the pork chops

Drizzle vegetables with the olive oil and season to taste with salt and pepper

Arrange pork chops on the pan. Brush with the honey-Dijon mixture, then flip and brush other side. Season with salt and pepper

Bake until vegetables are tender and a meat thermometer inserted into the pork chops registers 145°, about 25 min

Remove pan from oven, and let rest 3 min. before serving

Divide pork chops and vegetables evenly between 4 plates. Serve immediately
