Light and Tasty Mini Meat Loaf

Preheat oven to 375°. Spray a muffin pan with cooking spray; set aside

Heat oil over medium-high in a large sauté pan. Add mushrooms, onion and garlic and cook until tender, about 8 min. Set aside to cool

In a large mixing bowl, break ground beef into small pieces

Add cooled mushroom mixture, seasoned salt, panko crumbs, egg and 1/4 cup of the ketchup. Mix with clean hands or large spoon until well combined

Spoon mixture into prepared muffin pan, dividing evenly between cups. Top with remaining ketchup

Bake until 160° in center, about 25 min. Let cool 5 min. before removing from pan

Serve immediately with steamed Wellsley Farms Organic Extra Fine Green Beans and a small baked potato
