Whisk together the mayonnaise and sour cream in a large salad bowl. Set aside

Roughly chop potatoes, including skin. Season with salt and pepper and add to the salad bowl. Gently toss to coat completely with the mayonnaise mixture

Add the bacon, scallions and cheddar; gently toss until just combined. Refrigerate for 1 hour

Serve cold with your favorite cookout fare
