Meatless Taco Chili

In a large pot over medium heat, add the butter, onions, and bell pepper. Cook until they just start to brown, 10 – 15 min. Add the beans, corn, cumin, chili powder, onion powder, garlic powder and taco seasoning. Mix to combine, let cook until fragrant, about 2 min

Add the crushed tomatoes, mix until combined. Bring to a simmer, reduce heat to medium-low, cover, and simmer for at least 20 min.*, up to 4 hours (the longer it can cook the better it will taste). Stir every few minutes. Serve with your favorite taco toppings

*If you don’t have time to watch your pot on the stove, preheat your oven to 250°, make the chili in an oven-safe pot. Cover and place in the oven for 4 hours and allow it to slow cook.
