Combine apples, lemon juice and water in a large pot. Cover and bring to a boil over high heat, stirring occasionally

Reduce heat to medium and move the pan cover slightly to the side to vent

Cook, stirring occasionally, until apples are completely soft, about 40 min. Set aside to cool

Working in batches, pass cooked apples through a mesh sieve or a food mill fitted with the fine disk to remove the skins
5
Enjoy immediately as a snack or as a side dish for roasted meats or poultry
