Paper Bag Flounder

Preheat oven to 400°

Slice snow peas into quarters lengthwise. Place vegetables and orange juice in a microwave-safe bowl and cover with Berkley Jensen Plastic Wrap. Slice a small vent in the wrap, then microwave on HIGH 2 min. Remove wrap and set aside

Season fish with salt and pepper. Tear off 4, 12"-long sheets of parchment paper. Fold each one in half, making a crease at the fold. Open and center a fillet to one side of the fold. Repeat with remaining fillets

Top each fillet with one-quarter of vegetable mixture. Dot with butter and sprinkle with parsley. Fold paper over fish and roll the edges tightly to seal. (Should look like a turnover.)

Place “bags” on a large baking sheet and cook 10 min. Remove from oven and let sit 5 min

Transfer to dinner plates and cut open. Serve immediately with orange wedges and Wellsley Farms Organic Quinoa
