Pressure Cooker Pot Roast with Carrot Gravy

Season both halves of the roast thoroughly with salt and pepper

Place meat in pressure cooker and arrange celery, onion and carrots around it

In a large measuring cup, stir together the beef broth, baking soda, soy sauce and thyme. Pour over the roast

Lock the pressure cooker lid in place. Pressurize on high and cook for about 80 minutes

Turn off pressure cooker and use the slow pressure release method to depressurize

Remove lid and transfer roast to a platter. Skim excess fat from liquid

Working in batches, puree the liquid and vegetables to create a thick gravy. (If you prefer traditional carrot gravy, leave a few pea-sized pieces of carrot.)

Slice roast. For each serving, top with 2 Tbsp. of the gravy and serve with Wellsley Farms Homestyle Mashed Potatoes and microwave-steamed green beans
