Brown Sugar & Mustard Glazed Pork Roast
Juicy inside and crusty outside, the brown sugar and mustard glazed pork roast is a delicious protein-rich dinner that you can cook for the whole family on a weekend.
Ingredients
1 - 4 lbs. Pork Boneless Center Cut Loin Roast
1 tbsp. salt
1/2 tsp. Cayenne pepper
1/2 tsp. black pepper
2 tbsp. dijon mustard
2 tbsp. olive oil
1/2 cups brown sugar
Directions
- Preheat oven to 350 degrees
- In a small bowl mix salt, cayenne and pepper. Season the pork on all sides
- Heat oil in a large ovenproof saute pan over medium-high heat. Sear pork loin on all sides. Remove from heat
- Brush the entire surface evenly with mustard, then carefully rub the brown sugar all over the pork, into the mustard. Place roast back into the pan, fat side up
- Roast in the preheated oven until the internal temperature of the pork reaches 145 degrees with an instant-read thermometer, about 20 minutes per pound
- Remove from oven and let rest 15 minutes before slicing and serving. * *The temperature of the pork will continue to rise as it rests and the juices will redistribute as the meat relaxes
- Do NOT cut into the meat to see if it is done! Always use an instant-read thermometer
