Grilled Boneless Shoulder Steak with Tangy Marinade

Ingredients

1/4 cup fresh lime juice

2 tbsp. packed light brown sugar

2 tbsp. vegetable oil

1 tbsp. Worcestershire sauce

1 tbsp. minced garlic (about 3 cloves)

2 lbs. USDA Choice Beef Chuck Boneless Shoulder Steak

1 tsp. salt|1 tsp. ground black pepper

 

Directions

  1. Combine lime juice, brown sugar, oil, Worcestershire sauce and garlic in a small bowl; mix well
  2. Place steak in a shallow baking dish, then pour the marinade over it. Turn to coat
  3. Cover with plastic wrap and marinate in the refrigerator for at least 3 hours or overnight, flipping the steak halfway through
  4. Brush grill grate with oil, then preheat grill on medium heat
  5. Remove steaks from marinade and blot dry with clean paper towels. Discard marinade
  6. Arrange steaks on the grill, leaving space between them. Cook 5 min. until browned with distinct grill marks
  7. Flip and continue cooking until an instant-read thermometer registers 130° (medium-rare), about 5 more min
  8. Transfer steaks to a warm platter and rest for 5 min. before serving
