Grilled Chicken Breasts with Tex-Mex Cranberry Glaze

The smokey flavor of grilled chicken is paired with the tangy cranberry. Can be served an appetizer in  gatherings or pair with salad or spaghetti for a savory dinner

Grilled Chicken Breasts with Tex-Mex Cranberry Glaze

Ingredients

1 (14 oz.) can Ocean Spray® Jellied Cranberry Sauce
2 tsp. cumin
1 tsp. grated lime zest
2 tbsp. freshly squeezed lime juice
1 Jalapeño pepper, seeded, finely chopped
Bone-in chicken breast halves, (about 2 1/4 lbs.)
1/2 tsp. salt
1/4 tsp. ground black pepper
chopped fresh cilantro, (optional)

 

Directions

  1. Heat grill on high. Combine cranberry sauce, cumin, lime zest, lime juice and jalapeño pepper in a small saucepan. Cook over medium heat, whisking often, just until glaze is smooth. Set aside 1 cup of glaze to serve with chicken
  2. Sprinkle chicken breast halves with salt and pepper; place skin side down on the grill. Cover grill. Cook, turning occasionally until internal temp at thickest area of the breast reaches 170° on a meat thermometer and juices run clear about 20 to 30 mins
  3. Brush chicken with remaining glaze during the last 10 min. of cooking time
  4. Heat reserved glaze until hot; serve over chicken. If desired, garnish with chopped cilantro
