Grilled Stuffed Portabella Mushrooms
Stuffed with crab meat, cheese and mayonnaise, these Portabella mushrooms are an absolute crowd pleaser!
Ingredients
1/2 stick Wellsley Farms® Salted Butter
2 large shallots minced
1 tbsp. minced garlic (about 3 cloves)
1 tsp. dried thyme
1 tsp. lemon pepper
2 tsp. Worcestershire sauce
1/2 cup Mayonnaise
12 oz. fresh claw crab meat
3/4 cup panko bread crumbs
1/4 tsp. Cayenne pepper
16 Wellsley Farms Portabella Caps, rinsed and dried
1/4 cup grated Pecorino Romano Cheese
Paprika, for garnish
Directions
- Preheat grill on medium heat
- In a nonstick skillet, melt butter over medium heat. Add shallots, garlic, thyme, and lemon pepper to the pan. Sauté. until tender, about 2 min
- Transfer to bowl and set aside to cool to room temperature, about 15 min
- Add Worcestershire sauce, mayonnaise, crab meat, crumbs and cayenne pepper to bowl and stir to combine. Taste and adjust seasoning, if necessary
- Divide mixture evenly between the 16 mushroom caps, then sprinkle with Pecorino Romano
- Arrange filled mushroom caps on a shallow grill topper pan, then place it on the grill grate
- Close grill lid and cook until mushroom caps are tender and the filling is hot and bubbly about 10 min
- Remove mushroom caps to a warm platter. Dust with paprika and serve immediately
