Quinoa Fruit and Mixed Greens Salad

Quinoa Fruit and Mixed Greens Salad

Ingredients

1/2 cup Wellsley Farms organic quinoa, cooked
5 cups Wellsley Farms super greens mix
1/2 cup red grapes, halved
1/2 cup strawberries, halved
1/3 cup feta, crumbled
1/4 cup Wellsley Farms sliced almonds
1/4 cup Wellsley Farms orange juice
2 tbsp. Wellsley Farms olive oil
1 tsp. garlic powder
1/2 tsp. salt to taste
1/4 tsp. pepper to taste
 

Directions

  1. Cook quinoa according to package directions, allow to cool
  2. Toss quinoa with greens, strawberries and grapes in large bowl
  3. Whisk together orange juice, oil, garlic powder, and salt and pepper
  4. Pour salad dressing over greens and toss well
  5. Top salad with feta and almonds, and serve
