Zoodles Primavera

This light and refreshing dish is made with zucchini noodles instead of pasta for a low-carb meal you can feel good about serving to your friends or family.

Once all ingredients have been prepped for cooking, process unpeeled zucchini in a spiralizer per the directions for your model

Heat oil in a large, nonstick skillet over medium-high heat. Add orange pepper and sugar snap peas to pan and sauté 2 min

Add zucchini noodles and chickpeas to pan and sauté 2 min., using tongs to toss noodles as they cook. (Noodles should still be slightly firm.)

Remove pan from heat and add the pesto and hot water. Toss to coat with tongs

Add green onions, yellow tomatoes and red tomatoes to pan. Gently toss with tongs until just mixed

Taste dish and add salt and/or pepper, if necessary. Serve immediately with Parmesan
