It has slightly flaky, pronounced crystals offering notes of dried stone fruit and spice, with an earthy depth. Pairs well with Burgundy, Cabernet Franc, Syrah, or a full bodied beer. This is a great table cheese to be served with toasted pecans, cherry jam and rustic bread.
