Rambutans have a unique, hairy-looking exterior. Their appearance is often compared to that of a sea urchin! Under the spiky exterior is a smooth, sweet white fruit. The translucent white flesh – succulent and slightly chewy – has a sweet yet creamy taste and contains an oblong, light brown seed in its middle. Some describe the flavor of rambutan as similar to a sweet green grape with a touch of acidity and floral undertones. So, despite their wild appearance, rambutans are actually quite delicious once you peel away that colorful, spiky skin! Rambutans can be used in smoothies, salads, cocktails, desserts and sorbets. Rambutans should be stored in the refrigerator, for up to two weeks.
