All fish in this product go from fresh caught fish to sully smoked in three days or less. The whole fish is filleted, deboned and smoked in their own Florida Keys facility. Smilin Bob's smoking ovens are heated with locally grown hardwoods to give the seafood a distinctive Florida Keys flavor. When done, the smoked fish is honey brown with a mild smoky flavor. They use only the freshest base ingredients: mayonnaise, cream cheese, fresh cut onion, key lime juice, and seasonings.
