Silver skin not removed
This roast was cut and tied, but the silverskin was not removed! This tough piece of membrane should always be trimmed off. Very disappointed that the BJs butcher didn't know that- I had to remove it myself, which was difficult working around the butcher twine.

I purchased two of these roasts for Christmas dinner. I marinated them over night and slow cooked them the following day. It turned out juicy, flavorful and so tender we didn't need a sharp knife to cut it. A little pricey but well worth it! Will by again.
