Brown Sugar & Mustard Glazed Pork Roast

Preheat oven to 350 degrees

In a small bowl mix salt, cayenne and pepper. Season the pork on all sides

Heat oil in a large ovenproof saute pan over medium-high heat. Sear pork loin on all sides. Remove from heat

Brush the entire surface evenly with mustard, then carefully rub the brown sugar all over the pork, into the mustard. Place roast back into the pan, fat side up

Roast in the preheated oven until the internal temperature of the pork reaches 145 degrees with an instant-read thermometer, about 20 minutes per pound

Remove from oven and let rest 15 minutes before slicing and serving. * *The temperature of the pork will continue to rise as it rests and the juices will redistribute as the meat relaxes

Do NOT cut into the meat to see if it is done! Always use an instant-read thermometer
