Loaded Baked Potato Salad

Classic baked potato salad with goodness of veggies and taste of creamy cheese! It'll be a hit sidedish in any party. You can also try this as a quick lunch or dinner.

Loaded Baked Potato Salad

Ingredients

1 cup mayonnaise
1 cup sour cream
6 medium-baked Wellsley Farms Russet Potatoes, cooled
8 slices Wellsley Farms Bacon, cooked and crumbled
5 scallions, thinly sliced on diagonal
1 cup Wellsley Farms Shredded Cheddar Cheese
1 tsp. salt
1/2 tsp. ground black pepper
 

Directions

1. Whisk together the mayonnaise and sour cream in a large salad bowl. Set aside

2. Roughly chop potatoes, including skin. Season with salt and pepper and add to the salad bowl. Gently toss to coat completely with the mayonnaise mixture

3. Add the bacon, scallions and cheddar; gently toss until just combined. Refrigerate for 1 hour

4. Serve cold with your favorite cookout fare
