Roasted Spring Asparagus with Cheese Cream

Trim “woody” bottom ends off asparagus with knife.

Line pan with foil and add 1-2 TBS olive oil

Roll asparagus around to get coated with oil

Put asparagus in 400° oven for about 15 minutes (thin asparagus will be done, thicker might take a little more- should be bright green and slightly browned)

While asparagus is roasting, add 1 cup heavy cream to sauce pan and simmer gently (watch that it doesn’t boil over), reducing to about ¾ cup or slightly thickened

Remove asparagus from over and put on platter

Add cheese blend to the reduced cream and cook on low, constantly stirring until cheese is almost completely melted

Add 5-8 grinds of the garlic herb grinder

Pour sauce over roasted asparagus and serve warm.
