Rinse and dry sweet potato and peppers. Skin can stay on but remove any dark spots.
Cut sweet potato into thick slices and then large dice
Peel and cut red onion in half and then in slices- reserve ½ cup of slices
Dice the remaining red onion slices
Seed the peppers, slice into strips and dice.
In oiled foil pan, add chopped sweet potatoes, the sliced red onions.
Coat well in oil, salt and pepper and roast for about 20 minutes or until tender and browned. Onions will be caramelized.
Meanwhile, make dressing:
Put all Dressing ingredients in lidded jar or plastic storage container and shake or whisk to blend
When potatoes are done, put in bowl, add the chopped raw red onion and peppers
Add dressing while warm
Salt and pepper to taste
