Herbed Apple and Cranberry Cornbread Stuffing

Spread cornbread crumbs on a baking pan and set aside overnight to dry

Preheat oven to 350 degrees. Spray a 9" x 13" baking dish with cooking spray

In a large skillet, heat oil over medium-high heat. Add onion, celery, and apple. Sauté until tender, about 2 to 3 min

Stir in pecans, dried cranberries, and seasoning. Sauté 1 min., then add chicken broth

Remove from heat, add cornbread and beaten eggs and toss gently to combine. Spoon mixture into prepared pan

Bake until center is completely heated through and the top is lightly browned about 30 to 35 min

Rest 10 min. before serving
