Grilled Lamb Chops with Yogurt Sauce

All-time-favorite lamb chops pair with the tangy yogurt sauce. Serve it with salads at dinner or simply enjoy the snacking.

Grilled Lamb Chops with Yogurt Sauce

Ingredients

1 cup Wellsley Farms Plain Organic Non-Fat Greek Yogurt
1 cup finely chopped cucumber
1 clove garlic, minced
1 tbsp. fresh lemon juice
1 tbsp. dried mint leaves (pantry item)
6 1& -thick American Lamb Rib Chops
1 tbsp. olive oil
Lemon wedges (for serving)

 

Directions

  1. For the sauce: Stir together yogurt, cucumber, garlic, lemon juice, mint, and salt and pepper to taste. Cover and refrigerate
  2. For the Lamb Chops: Preheat grill or grill pan on medium-high heat
  3. Pat the lamb chops dry and season with salt and pepper. Brush chops with oil and place on grill or grill pan. Grill, turning once, until meat thermometer in center registers 145° (medium-rare), about 5 to 6 min. per side
  4. Transfer chops to a plate, tent with foil and rest 3 to 5 min.
  5. Serve with the meat juices on the plate, lemon wedges and the yogurt sauce
