Roast Beef Cocktail Sandwiches

Delectable beef roast sandwiched in between Pumpernickel bread slices to add some fun and flavor to your cocktail hour.

Roast Beef Cocktail Sandwiches

Ingredients

1/2 Beef eye round roast, (about 3 lbs.), cooked
3 loaves Pumpernickel bread, (about 12 full slices per loaf)
 

Directions

  1. Carve cold roast into thin slices
  2. Sandwich one or two slices of roast between pumpernickel bread and top with Dijon mustard or horseradish sauce
  3. Cut sandwiches into quarters. Arrange on a tray and serve immediately
